The blend is Pinot Noir, Pinot Meunier & Chardonnay. The sparkling wine base was put through a full malolactic fermentation then bottled using the traditional method. The wines were individually barrel fermented before blending and have spent 5.5 years on Lees. The colour is soft pink and has a bouquet of roses & quinces. The bead is crisp, clean and of pure fruit flavours that you would expect to find in high altitude cold climate wines. The result is a sparkling wine that expresses true qualities of the cold climate Tumbarumba terroir. This wine will continue to add complexity with age. It has a dry and savoury finish.
