I bumped into winemaker Jono Hersey at The Ed in Adelaide while helping Taras Ochota unload some stock into the drive through bottle-o. What a nice chap. Handed me a glass of rose on sight, and didn’t judge the purchase of two tins of Dr Tim’s as we departed. The new rose is good fodder for pre-midday drinking, and dare I say, so is this, a fizz-y wine of chardonnay and pinot noir with a salmon hue. Excellent value, is the feel here. And from a good place.
Strawberries and cream, but a gentle waft, accompanied by faint toastiness, nougat, brioche. The palate is lean yet vigorous in bubbles, brisk in chalky acidity, awash with oyster shell-sea spray mineral feel. A lick of sweet, red berry fruit, and the fizz takes the wine away to its brisk, puckering finish. Easy to like this.

Handpicked then whole bunch pressed, settled in tank overnight before spending three months in barrel on fine lees.
Charmat with zero dosage to preserve the beautiful nuances of fennel, mountain herbs and fresh berries.
Varieties: 1/3 Pinot Noir, 1/3 Pinot Gris, 1/3 Chardonnay
Dosage: 4g/l 'Brut Nature'
Portions barrel fermented.
Nose: Freshly cut pear, green apple, nuances of raspberry, fennel and sea salt.
Palate: Lemon and lime energy laced over granny smith apple, spice and grapefruit pithe.
